So, I'm ill. Fairly impressively; the doctor and I are on it. It's also allergy season. Between the two I have no energy at all.
But people still have to eat, and tonight
metawidget is coming to supper.
This is the sort of day that makes me glad that when
random and I first moved in together one of our first purchases was a far-too-big-for-two-people chest freezer, even if we DID have to keep it in the living room of the condo, and that we tend to keep a lot of good nonperishables around.
I have just put on:
1 litre chicken broth, President's Choice Organic, sold in a tetra pack.
1 cup Rancho Gordo Cannellini, which I put to soak last night with a few bay leaves. The bay leaves stay in for cooking.
Two large handsful diced ham, from the freezer where we stored it after we made a huge ham and got tired of eating the leftovers.
1 scant handful Epazote, from Penzey's
1 generous handful Rancho Gordo Oregano Indio.
About a teaspoon of Adobo Pepper, also Penzey's.
A generous handful of rosemary.
fairestcat will shortly go add a couple of diced onions and as much ribbon-cut collard greens as the pot will hold, which is a lot.
When
random and
metawidget get here I shall put on rice.
If I had frozen greens, which I often do, and frozen chopped onion, which I keep meaning to do, this would be pretty much a zero-effort supper.
ETA: Post-eating, I think I'd recommend 500 ml of chicken broth and 500 ml of water. Between the broth and the ham it was a tad saltier than I'd have strictly preferred. Otherwise a success.
