Just to be pedantic, it's steel-cut oats. The Red River wasn't sealed, and had gotten kind of scary, and I chucked it.

Also, you have no meh/take-it-or-leave it option.

But my good is seriously something like bananas foster with oatmeal. So, y'know, I think I'll stick with that. When there aren't fresh berries to be had.

THAT is what I call quite good. :-D

Although the blueberry pancakes (with vanilla or plain yoghurt, rather than - OR in addition to - the syrup) sound quite loverly, too. :-)

My full answer to number three was... Instant oatmeal, maple flavoured. Covered in handfulls of dried fruit and nuts, which included passion fruit, sunflower seeds, peanuts, raisins. Steeped with boiling well-water at fest, cooked over a gas stove in the fresh, open air.

It was a fresh unique breakfast for me at fest this summer, which probably won't be duplicated ;)

My wife claims the Hawaiian Bread Pudding with Pina Colada Ice Cream (all homemade!) is the best thing you can put in your mouth that doesn't involve chocolate. I made a 9x13 pan of the bread pudding, and we had it for dinner dessert one day, breakfast and dinner dessert the next. It was really! good!

Hawaiian Bread


1/2 c. Water
1/2 c. Pineapple Juice
1 Egg
2 T. Applesauce
3 c. Bread Flour
3 T. Sugar
3/4 t. Salt
1 t. Yeast
3/4 c. chopped Macadamia Nuts or Almonds
1/2 c. Coconut (optional)

Use the 1.5 pound White Bread Cycle on your Bread Machine.

Notes:


  • Pineapple Juice + Water to 1 cup - works nicely with Dole 6 oz. Pineapple Juice cans

  • 1 6 oz. bottle of Macadamia Nuts is the right amount


Use the above to make:

Bread Pudding


2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoons pure vanilla extract
3 cups cubed Italian bread, allow to stale overnight in a bowl
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans

Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes.

In another bowl, mix and crumble together brown sugar, butter, and pecans.

Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.

Top with

Pina Colada Ice Cream


1 c. 2% Milk
1/3 c. Half-and-half
1/3 c. Heavy whipping cream
1/3 c. Coconut milk
6 oz. Pineapple juice
1/2 t. Rum extract
1/4 t. Vanilla extract

Put the above in your ice cream maker, freeze per manufacturer's instructions.
