Okay, okay, okay.

*gets out tawny port & brie &...*

damn. Fresh out of gingered marmalade. Have to go with cranberry relish and sweet chili and melted semi-sweet morsels.

I'll use brie made of goat's milk if you don't mind, but it certainly sounds good (though I've just had breakfast, better wait a bit)

I'm hesitant only bc I don't know what baked brie taste like, exactly.

That *almost* makes me want to cook. It does sound insane...but rather insanely good.

I think the chocolate is A Bridge Too Far, and I don't really like it with port anyway. I'd stay with the Brie/ginger marm/and port. Or maybe just the cheese and marm and espresso.

Sniff. Sadly, after half a century of enjoying all kinds of cheese, I have, in the last month, become lactose intolerant. I am devastated! I LOVE baked Brie!!!!!!

I am doubtful about the chocolate, but only because I tend to be doubtful about chocolate in general. Other than that, it sounds delicious.

Are you sure you meant "NOM NOM NOM", not "NON NON NON"? (The first one would be "name, name, name", the second one, "no, no, no".

And, I think a ruby port or an LBV or in fact most any port but a white port could work quite nicely with that, actually.

...the brie and the port, for me. I'd eat brie with port.

I hate ginger. And I'm not too keen on dark chocolate unless it has cinnamon in it and is in chocolate mousse...

I was with you right up until you added the chocolate. That part, I'm not so sure about, but I'd take the rest.

I tend to agree with [livejournal.com profile] executrix that the chocolate may be a bit Too Much, even tho I'd love it on its own. And you know I just don't have the port-appreciation gene. But the brie/ginger marmalade combo sounds scrumptious.

I am thinking of bringing the makings -- not port -- along on Thursday. Elizabeth has that brie-baking setup...

The chocolate is a great idea, just not on the Brie itself. Served with however... v. good idea.
